An interview with Gunpowder Restaurant Founder Harneet Baweja

Harneet Baweja and his wife Devina moved to London from Kolkata in 2014. Captivated by the city and its vibrant and diverse culinary scene, they decided to open a restaurant of their own. In 2015, Gunpowder was born: a homestyle Indian restaurant, originating in Spitalfields and as of August 2018 – part of the One Tower Bridge family. We speak to Harneet about his journey so far.   Tell us about the journey of Gunpowder so far… It’s been such a fantastic journey since 2015 when we launched the first Gunpowder in Spitalfields, resurrecting what was an old curry house into a brand new restaurant. Since then, we’ve not only grown in size (Gunpowder Tower Bridge has almost 100 covers!) we’ve learnt a lot of things along the way and I still wake up passionate about our product every day and want to give it my best. How would you describe the menu/ philosophy? The menu is designed to be shared as is common when you have dinner with your family. It’s everything I like to eat basically, but done correctly and as responsible as we possibly can be with regards to our produce.   What were the deciding factors in choosing London Bridge as your latest location? We’re a stone’s throw away from Tower Bridge, which is such an iconic London landmark. Plus the area is fun and has such an eclectic mix of people from corporates, residents & tourists.   What is your favourite thing to do in London Bridge? I love sitting by the river, especially when Tower Bridge opens up to let a boat past – I’ve probably seen it a million times now but I still can’t help but watch it.   Can you summarise the Gunpowder experience in 3 words? Explosion of flavours Finally, if we have to pick just one thing on the menu – what should it be?
