Borough Market Demo Kitchen: Migration of Taste

Running every Thursday in the Market Hall, Borough Market’s Demonstration Kitchen residencies focus on a particular theme each month. This month: Migration of Taste While some chefs may have adopted methods and ingredients both from the country they were born in and the country they have ended up living in, others may have decided to turn their backs on ‘fusion’ cooking, preferring instead to keep traditional recipes alive.
